Chapter intro

Salmon, saumon

 - salmon. Scotland is famous for its salmon rivers. Salmon fishing was once a thriving industry and great salmon stake nets were a familiar sight on sloping sandy beaches. The fish were also caught in cruives (wicker containers) and netted from boats. In some places such as the Solway, large rectangular haaf nets were used by fisherman who waded out and held the net in the current of the estuary. Salmon farming is taking over as a safer way of supplying the current enthusiasm for salmon, but it is only a century ago that servants were complaining about being fed too much salmon.
